PREPARATION:
Put the boiled black beans in a deep bowl. Whisk olive oil, vinegar, tahini and garlic in a separate bowl. Add the sauce to your boiled beans and mix. Add the purple onion and greens and continue mixing.
Serve garnished with purple onion and parsley.

1 purple onion, chopped
2 cloves of garlic
2 cups black beans
1 teaspoon of tahini
½ teaspoon of olive oil
3 tablespoons of vinegar
