Bean Paste

PREPARATION
Soak the beans overnight, drain them and boil in a saucepan for five minutes. Pour the boiling water, add enough water to cover the beans and add a teaspoon of salt and boil until soft.

When the shells of the beans begin to separate, drain them after they’ve cooled. Than grind them into coarse flour with a mortar or food processor. Mix the boiled, peeled and crushed beans with tahini, crushed garlicand lemon juice in a bowl. Put it on a flat plate and drizzle with olive oil and red pepper when serving.

3 tablespoons of tahini
2 cloves of crushed garlic
3 tablespoons of lemon juice
2 tablespoons of olive oil
1 teaspoon of red pepper flakes
