PREPARATION OF
Wash the dried broad beans, remove the brown skins if any, put them in a deep bowl, add cold water and leave for 6-8 hours. Peel the onions and cut them into quarters. Peel the garlic cloves and crush them. Put the broad beans, onion, garlic, olive oil, sugar, salt in a pot, add water and cook until the broad beans are soft, checking the water from time to time. Before it cools down, mash the broad beans with a spoon or a hand mixer and make a puree. Add tahini, chopped dill and lemon juice to the broad beans puree, mix and pour into a serving plate.
