Fig filled cookies

Take all the ingredients and put them a deep bowl and make a dough. Cover the dough with a clean cloth and let it rest for 30 minutes.

In the meantime, finely chop the dried figs. Make a pot of water for the stuffing, add sugar and the figs and bring to boil over medium heat. Take the fig stuffing from the stove. Add walnuts and cinnamon, mix and leave to cool.

Roll the dough a half finger thick with the help of a rolling pin on a flat surface. Than open it in a rectangular shape. Divide the rectangle you prepared into four. Spread each fig mortar on the rectangle. Combining both sides in the middle, close the dough. Cut to the dimensions you want. Arrange them spaced apart on a tray lined with greaseproof paper. Than put in a preheated oven at 170 degrees.

125 g butter (at room temperature)
Half a glass of granulated sugar
1 egg white
1 packet of baking powder
1 packet of vanilla
300 g dried figs
2 tablespoons of granulated sugar
1 glass of water
1 teaspoon cinnamon
1 cup finely ground walnuts
