Set the oven to 200 degrees. Cut the onion into cubes and fry in olive oil until golden brown. Chop the carrot into rings and add to the onion. Clean the seeds of the red, green and yellow peppers, cut them into strips and sauté together with the onions. Chop the cabbage into large pieces and add to the peppers.
After sautéing for a few minutes, add the diced tomatoes and salt. When the cabbage starts to soften, add the washed rice and after 5 minutes turn off the stove and transfer half of the dish to a square baking dish and cover with half of the grated cheddar cheese. Spread the other half of the cabbage over the cheddar. Bake in the preheated oven for 10 minutes, then sprinkle with the other half of the cheddar cheese.
Continue baking in the oven until the cheddar cheese is melted and lightly browned. Serve hot.
