Rice Salad

Put the rice in boiling salted water and boil it until it’s soft. Than drain it and put it in a container with cold water. Peel the skin of the tomatoes, remove the seeds and cut them into small pieces. Remove the outer skins of the spring onions and the stems and seeds of the green pepper, than cut them both into rings. Remove the thick sprigs of the mint and dill and chop finely. Pour the oil of the tuna and mash with a fork. Cut the pickled mushrooms into two or four pieces, depending on their size.

Drain the rice and put it in a bowl together with the tomatoes, spring onion, pepper, dill, tuna, olives and pickled mushrooms you have prepared. Add olive oil, salt and lemon juice and mix well.

You can also make this salad with boiled chicken and cubed cheddar or similar cheese instead of tuna. In this case, it will be more delicious if you put parsley instead of dill.

2 medium sized tomatoes
2 spring onions
1 green pepper
1/4 bunch fresh mint and dill
1 can of tuna (200 grams)
2 tablespoons of pickled mushrooms
8-10 olives
2 tablespoons of olive oil
1 tablespoon lemon juice
