Roll with filled Eggplants

PREPARATION:
Wash and dry the eggplants. Slice it lengthwise and fry in olive oil. Saute the finely chopped onion and garlic in a pan with a little olive oil. Finely chop the tomatoes and peppers, add and mix.

When it’s cooked, remove it from the heat and add the chopped parsley and mix. Add the salt. Place the mortar on the tip of each eggplant slice and wrap it in a roll. Place upright on a plate and serve.

INGREDIENTS:
3 eggplants
1 onion
2 cloves of garlic
2 tomatoes
1 green pepper
red pepper paste
8 sprigs of parsley
Olive or sunflower oil
Salt
