Stuffed Squid

Put the body parts of the squid you have removed into salt water and boil them for 10 minutes. Do not throw away the water. Finely chop the squid sleeves. Peel the outer skin of the spring onion and cut it into thin rings. Soak the currants in hot water for 15-20 minutes.

Put two spoons of olive oil, pine nuts, onion and the chopped squids in the pan. Stir fry for 2-3 minutes. Add the rice, salt, pepper, allspice, cinnamon, and currants. Add 1 cup of boiling water where the squids were boiling in. Cook for 1-2 minutes on low heat. Turn off the stove. Add the chopped dill.

Stuff the squids with the help of a small spoon. Put them side by side in a small saucepan. Add 2 more cups of the water the squids were boiling in. Drizzle 1 tablespoon of olive oil over them. Turn a plate upside down and cover them. Cook on low heat for 15-20 minutes. You can serve the stuffed calamari warm or cold.

3 tablespoons of olive oil
2 spring onions
1.5 tablespoons of stuffed rice
1 teaspoon of pine nuts
1 teaspoon currant and half a bunch of dill
1 teaspoon allspice
half teaspoon cinnamon
black pepper
